“We don’t imitate meat, but create flavors that suit everyone”

BioManija’s vegan burek has become a kind of gourmet hit. Guests come all the way from Sarajevo just to taste it, and when they ate it for the first time, they didn’t even notice that it was vegan. This, it seems, is the essence of their approach – they do not imitate meat, but create flavors that satisfy everyone, without the need for compromises.

Odgovara im toliko da gosti unaprijed rezerviraju neka jela, poput sarme, a promjene jelovnika zbog sezonskih namirnica nailaze na otpor jer se ljudi teško odriču omiljenih jela. Tako sada, s dolaskom proljeća, sarma odlazi s jelovnika, a dolaze neke novosti, poput rižota sa šafranom.

It suits them so much that guests book some dishes in advance, such as sarma, and menu changes due to seasonal ingredients are met with resistance because people find it hard to give up their favorite dishes. So now, with the arrival of spring, sarma is leaving the menu, and some new dishes are coming, such as saffron risotto.
